Ingredients:
- 1 can artichoke hearts
- 1/2 lemon
- 1 package frozen spinach
- 1 cup mayonaise
- 1/8 teaspoon pepper
- dash of crushed red pepper flakes
- 1/2 cup shredded parmesan cheese
- 1/4 cup shredded pepper jack cheese
- 1 clove garlic (chopped finely or minced)
- salt to taste
Directions:
- In a large bowl, mix mayo with seasonings, parmesan and lemon juice
- Thaw the spinach in the microwave and squeeze out the excess water
- Pour artichokes into strainer and squeeze the excess water out of them
- Chop artichokes in food processor
- Add spinach and artichokes to large bowl with everything, mix together well
- Place in baking pan or bowl and top with shredded pepper jack cheese
- bake at 350 for 30 minutes
*I tripled this recipe for the Christmas Dinner crowd of about 20 people - you'll want to at least double it if it's more than 2 people eating.
