All I wanted was a skinny girl margarita... is that too much to ask?
I spent an hour and a half preparing this meal:

Yes folks, that's my skinny margarita he's drinking...
Dave must have had too much fun in the chat room of his fantasy football draft because this is the explanation I got:
Dave: It's strong BUT I think you're going to hate it.
Me: uhh ok can you dillute it?
Dave: Nah, you wanna beer? I'll just drink this.
Me: (rolls eyes) and grabs the wine..
Baked Eggplant with Shrimp - recipe copied from The Red Bar in Grayton Beach Florida where we had THE best time our last night on vacation!
Ingredients: (I doubled this recipe)
1 eggplant (halved lengthwise)
1/2 cup olive oil
8 medium shrimp
1/8 cup choped fresh basil
2 cloves garlic (chopped finely)
1/2 cup white wine
1 cup italian seasoned bread crumbs (I used half this amount)
1/2 cup grated parmesan cheese (I used shredded)
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Scoop out the flesh of the eggplant, chop, and reserve. Coat shells with olive oil, and season with salt and pepper; set aside.
4. Bake in preheated oven for 30 to 40 minutes, or until eggplant is tender.
I served it with spanish rice b/c that's what I had.
We loved this dish and I'm glad b/c it was kind of a pain to make.

Wow, I am so impressed...it looks amazing, Dave is a lucky man! But shame on him for drinking your drink!
that's hilarious. I made one from Bethenny's recipe on her website and it was super strong -- I had to wait for the ice to melt some before I could really drink it all. But, it makes for a cheap date!
