I was inspired by my sister in law Kristin to make stuffed peppers for some friends the other night and they were a huge hit!
I searched and searched for recipes and couldn't find one I loved so i decided to make my own!
Ingredients:
8-10 Red Bell Peppers
1 lb regular sausage
1 lb hot sausage
2 cups (uncooked) brown rice
1 large yellow onion chopped
1/2 teaspoon garlic salt
1 can Rotel -lime and cilantro flavor
1 handful chopped cilantro
2 cups shredded cheese
Directions:
Preheat the oven to 350 F
Cook sausage in a large skillet, mix in the onions while it cooks, add garlic salt. Drain sausage and set aside in large bowl.
Cook brown rice according to package.
While rice is cooking add 1 can Rotel and 1 cup shredded cheese to sausage and onion mixture.
Chop the tops off of the bell peppers and scoop out the insides, place them into a greased baking dish.
When the rice is done, mix it in the large bowl with everything else.
Fill each bell pepper with the mixture and cover with shredded cheese.
Cook at 350 F for 12 minutes
Serve with a side salad and enjoy! This was SOOO good! And you could add whatever you like really, Quinoa and black beans would be really yummy!
